Animal Science Meat Sales Information


Meat is cut, wrapped and frozen when sold. See chart below for products offered.

Sale dates are scheduled every Friday from 9:00AM-5:00PM. If the Sales Room will not be open it will be posted.

Sales are held in the Meat Sales Room located on the West End of the Animal Science Building in room #136.

Order totals will be calculated at the time of order pick-up. Cash, checks, credit cards and payroll deductions (deductions available for UW employees only) are the only forms of payment accepted.

**NOTE** Please keep in mind that we are a teaching facility.  Cuts of meat may vary in size from commercially cut product and occasionally some pieces may be missing from described packages due to research/classroom projects.

**NOTE**Due to the varying size of each animal, the weight listed below is an average weight of a typical order. The package you pick up may be larger and will cost more due to the extra amount of product.

May Include: Beef Rib Steaks (bone-in), Large End Rib Roast, Petite Tender (Steak), Mock Tender Roast, Top-Blade Steaks.

25-45 LBS

Rib Package, Boneless BEEF

May Include: Beef Rib-eye Steaks, Rib-eye Roast, Petite Tender (Steak), Mock Tender Roast, Top-Blade Steaks.

75-90 LBS

Bone-in Forequarter BEEF

May Include: Arm Roast and/or Steaks, Blade Roasts and/or Steaks, Flat-half Brisket Roast, Point-half Brisket Roast, Rib Steaks, Rib Roast.

 50-65 LBS

Boneless Hindquarter BEEF

May Include: Top-loin Steaks, Tenderloin Steaks, Tenderloin Roast, Sirloin Medallion Steak, Sirloin Steaks, Breakfast Sirloin steaks, Top Round Steak, Eye of Round Roast.

60-80 LBS

Semi-boneless Hindquarter BEEF

May Include: Top-loin Steaks, T-Bone Steaks, Porterhouse Steaks, Tenderloin Roast, Sirloin Medallion Steak, Sirloin Steaks, Breakfast Sirloin Steaks, Top Round Steak, Eye of Round Roast.

Side of Pork

May Include: Boston Butt Roast, Pork Chops, Country Style Ribs, Sirloin Roast, Spare Ribs, Smoked Ham Rump Portion, Smoked Ham Shank Portion, Smoked Ham Hock, Smoked Ham Steak, Smoked Bacon, Smoked Bacon Ends and Pieces, Fresh Breakfast Sausage.

Lamb

May Include: Arm Chops, Blade Chops, Spare Ribs, Lamb Shanks, Rib Chops, Loin Chops, Sirloin Chops, American Style Leg of Lamb.
